Top Chefs To Join Forces In Cleaver East Restaurant Launch

Michellin-starred chefs Oliver Dunne and Rory Carville are joining forces to launch a new restaurant, Cleaver East, in the former location of the Tea Room at the Clarence Hotel in Temple Bar, Dublin 2.

The launch will see Carville exit his role at Locks Brasserie in Portobello, Dublin 8, where he was awarded a Michelin star in September 2012. Dunne will continue to run the Michelin-starred Bon Appétit restaurant.

The duo are reported to have taken over the entire food service contract for the Clarence hotel. However, Cleaver East will operate as a separate business entity rather than as a restaurant within a hotel and is expected to open in late July or early August.
