Chef John Elliott, who has previously worked with celebrity chefs Gordon Ramsay and Gary Rhodes, has opened a new 58-seater tapas restaurant on Belfast's Upper Queen Street.
The Belfast Telegraph reports that the theme at the new eatery, which is named Edo, is a "feeding and sharing style serve" amid "cosy surroundings". However, Elliott added, "we also allow for those who are used to traditional services to order their food and have it served as a starter or main."
Commenting on Edo's use of a Bertha oven, which allows chefs to infuse their food with a distinctive taste by cooking with apple and pear wood, Elliott said, "It gives a unique, earthy smokiness flavour to the meat."
Edo currently employs 11 staff members, but Elliott asserted he will be seeking out more staff for front of the house work, as well as a manager, supervisor and barman, as business grows.
