Mark Ussher Appointed Executive Chef At Radisson Blu Royal Hotel, Dublin

Radisson Blu Royal Hotel, Dublin has announced the appointment of Mark Ussher as executive chef.

Ussher will lead and oversee all aspects of food and beverage at Dublin’s newest square, Le Pole Square, which includes Radisson Blu Royal Hotel, Dublin, Dublin Royal Convention Centre, Velvære Spa, Old Town Café and Old Town Wine Bar.

With over 30 years of culinary experience under his belt, Ussher is a member of Euro-Toques, a community of chefs, dedicated to preserving Ireland’s rich culinary heritage. The organisation promotes the use of local, seasonal ingredients and traditional cooking methods which Ussher likes to incorporate into his own work.

The renowned chef has worked in London, Abu Dhabi and, many well-known Irish properties including The Clarence Hotel, Peacock Alley and Luttrellstown Castle.

He also worked in Spain, where he managed a chain of Mediterranean-style restaurants, while also taking time to enhance his skills by staging at renowned establishments in Barcelona, including the iconic Bar Canete and Michelin-starred Tickets. Most recently, he held the position of executive chef at Trump International Golf Links & Hotel.

In Dublin, Ussher achieved notable acclaim with his restaurant, L’Aubergine, which was named one of Ireland's Top 100 Restaurants by John and Sally McKenna's Bridgestone Guides just three months after opening in 2003.
