Generator Hostel Group has collaborated with 22 year old UK chef Luke Thomas to create individual, bespoke food offerings for each of its 12 hostels around Europe.
Thomas has previously worked at Jamie Oliver's Barbecoa and Chicago's Alinea, the latter of which was recently ranked number 15 in the World's 50 Best Restaurants list.
The group, which has a location in Dublin's Smithfield, will have Thomas create menus that are primarily aimed at the millennial generation and inspired by local street food and culture. Dishes will be designed for sharing and to be fresh as well as affordable for budget travellers.
According to TheCaterer.com Thomas has currently launched the new menu for the Generator hostel in Amsterdam where it serves items such as eggs benedict and harissa lamb pitta with mint and pomegranate yoghurt.
Speaking about this new collaboration, chief executive officer of Generator Hostels, Fredrik Korallus said: “Our dynamic food offering is a fundamental part of the sociable lifestyle experience we create. Luke is connected with his generation and has a unique way of interpreting local and global trends into exciting, simple and fresh offerings.”
