Grindstone Speciality Coffee has officially opened a new cafe this week, in the new Docklands development, Dublin Landings.

The new establishment will be serving up specialty 3fe coffee alongside pastries from local favourites like Medialuna and Margadh.

“Expanding from our Dundrum roots to this new hub is a huge milestone for us, and we’re committed to bringing the same high standards and community focus that made Grindstone a beloved part of Dundrum,” said Simon Moore and Erwin Pollard, Grindstone founders.

This week, Grindstone Speciality Coffee joins a tenant line-up that includes the Mayson Hotel, WeWork and Fresh, as the sole cafe operator in Dublin Landings.

Grindstone serves a selection of 3fe coffee alongside guest roasters like Blind Monkey. Complementing its coffee offerings, Grindstone features toasted sandwiches from Greenville Deli, a curated menu of artisanal food from Margadh, Medialuna, the Village Dairy and Goat’s Oats.

The cafe’s interior, designed by Irish companies Third Mind Design and Redfern Construction, aims to blend modern aesthetics with a warm and welcoming atmosphere.

Clean lines, organic materials and industrial touches are used to create a visually inspiring space, centred around a custom-designed Synesso MVP coffee machine. Drinks and dishes are served on handmade Araucaria Ceramics cups and plates.

Dublin Landings is the latest redevelopment in Dublin’s iconic Docklands, with a guide development cost of €700 million. The project includes Grade A office spaces across five buildings, 268 apartments, and a mix of retail and leisure offerings.

The development has already attracted major institutions like the Central Bank of Ireland, the National Treasury Management Agency, Microsoft and Salesforce, as well as new headquarters for Citibank, under construction nearby.
