Earlier this week, the Irish international food symposium, Food on the Edge, was launched at Amass restaurant in Copenhagen.
The event will return for its second year and takes place in Galway on 23-24 October, consisting of a series of talks and debates about the future of food in the hospitality industry as well as creating a global culianry network.
JP McMahon, the founder of Food on the Edge, collaborated with three of the most well-known Nordic chefs to serve a series of snacks to guests during the launch evening.
These three chefs, Christian Puglisi of Relae, the #45 best restaurant in the world, Matt Orlando of Amass #66 in the world, and Sasu Laukkonen of Chef & Sommelier will all participate in this years Food on the Edge.
There were talks about fishing sustainability in Peru from Diego Munoz as well as a talk from Ross Lewis of Chapter One who commented that, “Food on the Edge is the lightning rod for the food movement in Ireland”.
Among the guests were chefs Niklas Ekstedt, Syrco Bakker, the Irish Ambassador to Denmark Cliona Manahan and John Mulcahy the Head of Food Tourism at Fáilte Ireland.
