CBRE has announced the first lettings at Bolands Mills, which includes a number of food establishments.
Eighty percent of the units are now let at Bolands Mills, the mixed-use destination made possible by Google. They will open on a phased basis between late 2024 and early 2025.
'Welcoming Destination'
"Our goal was to create a welcoming destination that appeals to people of all ages, interests, and abilities," said Michael Conaghan, Google's project director on Bolands Mills.
"With over 50,000 square feet dedicated to the public, a diverse mix of businesses, and Google's new engineering hub, Bolands Mills is poised to become a thriving part of the Grand Canal area once again."
Bolands Mills Bakery
Thibault Peigne and the team of bakers behind Russell Street Bakery and wholesale brand Tartine, will open Bolands Mills Bakery, in the heritage building, Pim House, beside The Flour Mills.
"At Bolands Mills Bakery, we are a dedicated team of artisan bakers, chefs, and administrators united by our unwavering passion for quality baked goods," the Bolands Mills Bakery team said.
"With rich wholesale experience honed at Tartine and retail expertise refined at Russell Street Bakery, we bring you a flagship bakery experience like no other."
The Animal Collective
The Animal Collective, established in 2016 by Shane Clifford, Hugh O’Farrell & Declan Murphy, will inaugurate a 3,600 square foot bar in Bolands Mills' Unit 3 and a 6,000 square foot food hall in Unit 4.
The bar group, currently running five establishments nationwide, including Bonobo, Kodiak and Caribou in Dublin City.
"With over twenty years’ experience in hospitality, we’re very much looking forward to bringing our product to Grand Canal Dock. This really will be an inclusive place for everyone,” the group said.
Grindstone Speciality Coffee
Simon Moore and Erwin Pollard, the founding owners of Grindstone Speciality Coffee, will be serving coffee and small producers’ products on the ground floor of the Barge House.
This will be Grindstone’s second boutique coffee shop in Dublin, joining the original shop in Dundrum.
