Hospitality Ireland is pleased to present the Autumn 2022 issue of our digital magazine, which, in support of hospitality and tourism businesses, we are continuing to offer free of charge.
In this issue, we talk to two brilliant young Irish women working at the top of the restaurant industry in London. Niamh Larkin, who grew up on a dairy farm in Limerick, worked for a time at the Dunraven Arms and is now executive pastry chef at 45 Park Lane, in London’s iconic Dorchester Hotel.
Then there’s Marguerite Keogh, born and brought up in Co. Clare, who worked at Pétrus in London, then opened her own place, the Five Fields, where her remarkable food has been recognised with a Michelin star.
We also hear from Noel Anderson about the brand-new venture that he has launched with his partners, Sean O’Brien, Dave and Rob Kearney, and Jamie Heaslip. The Blackrock occupies the former Wetherspoon’s and is bringing a brand-new energy to Blackrock Village.
Meanwhile, Marie-Thérèse and Ruairí de Blacam are reinventing their iconic Inis Meáin, a restaurant and hotel that set new standards of food and design when it first opened here. We can’t wait to see what happens next!
In all, there is much to be cheerful about. There is activity, ambition and energy within the hospitality sector. There are also areas for improvement – something about which Dr Deirdre Curran and Dr Mary Farrell, an academic and a chef, have plenty of thoughts.
