This week, Fiona Beckett of matchingfoodandwine.com managed to inspire numerous restaurateurs, chefs and the wine trade when she travelled to various parts of Ireland to host seminars on pairing different foods with wines of choice.
Beckett's first stop included Café Merlot in Enniskillen and Ox Cave in Belfast. From there, she led a Food Trail in Galway City, which included food from O’Conaire’s, Cava Bodega, Brasserie on the Corner, Bite Club and the Latin Bistro.
She advised her audiences to liaise with the chef to discuss the flavours and sauces to be used with a dish before making the wine choice. Thursday brought her to Ananda at the Dundrum Shopping Centre, where the emphasis was on how seasoning affects your wine choice.Beckett's final day of the week-long tour will be at Fenn’s Quay in Cork city where she will be matching local artisan food with her choice of Febvre wines.
On Monday (17 February), Jan Konetzki (pictured), Head Sommelier at Restaurant Gordon Ramsay London, will take guests through his thoughts on creating new, customer friendly wine lists. As the recent award winner of '2015 Imbibe Wine List of the Year', he is well qualified on this subject and he has chosen some Febvre wines for tasting after the talk.
Spanish TV Chef Enrique Fleishmann of the Basque Culinary Center in San Sebastian will be demonstrating how some typical Basque pintxos are made on Tuesday 16 February. He will also transfer some traditional Irish dishes into pintxos. All his dishes will be matched with a selection of the award winning Conde de Valdemar Rioja wines.
Marcelo Retamal, Chief Winemaker of De Martino Wines, will present 'A Very Different Chile', demonstrating Chile’s diversity on Wednesday 17 February. He will showcase his pursuit of site-specific vineyards best suited to particular grape varieties through his work with Single Vineyards and wines from ITATA. Decanter Magazine voted Marcelo the Best Winemaker of Latin America and 14th Best in the World for this work in December 2015.
Febvre will host a special portfolio tasting in Sligo Park Hotel, Sligo on Thursday 18 February.
FEBVREUARY's "21 Wines – 21 Days” will continue each day between 11am and 5pm at the Febvre showrooms in Sandyford Industrial Estate, Dublin 18 where Febvre wines will be on show each working day during February and visitors can also experience Le Verre de Vin Wine by the Glass technology which keeps both still and sparkling wines fresh for 21 days.
