The five-star Ashford Castle in Cong, Co. Mayo is set to reopen after its €47m restoration by its new owner.
The resort was seized from businessman Gerry Barrett almost four years ago and placed into receivership. In 2013 it was purchased by Red Carnation Hotels, a South African group founded by octogenarian husband-and-wife team Stanley and Beatrice Tollman,
The group, according to the Irish Times, has spent the money restoring the hotel while adding modern touches, including a 32-seater cinema and new spa and swimming pool.
A new nine-hole golf course has been added at a cost of half a million, while a new retail element has been added through a concept called Mrs T’s Boutique and Bakery.
All 82 bedroom have been refurbished and with the extra amenities added, room rates have risen to €495 for bed and breakfast in peak season to reflect the improvements.
